Simple recipe for nights when you are short on time.
For serving size, it's one tortilla, one chicken breast and 2 strips of bacon per person -Large Tortillas (12") -Boneless/Skinless Chicken breast -Bacon -Shredded Cheese (any flavor works, we usually use a Mexican combo or Colby/Jack combo) -Lettuce (either shredded or just cut into pieces) -Ranch dressing It's easy enough. Cook up the chicken in a skillet or a grill. Cook up the bacon. Cut the chicken into either fajita slices or bit size pieces. Crumple up the bacon. Then, assemble the roll up: -Lay the tortilla flat and put everything to one side of the middle, not in the exact middle for easier rolling -- Usually do chicken, bacon, then cheese and lettuce and ranch is last --Once everything is in, close up both ends by folding them in toward the tortilla --With those folded up, roll the tortilla so that the side with all the ingredients gets rolled first --Either eat in one piece or cut down the middle for easier handling Serve with rice, chips, fresh fruit, salad, fries, etc. Time saving tip: You can use precooked chicken and bacon in this recipe and just heat them up in them in the microwave.
