Chewy Ginger Snaps PDF Print E-mail

Ingredients:

2 1/2 Cup Flour At room temp
12 Tbsp unsalted butter
3 Tsp ginger, Ground
1 Cup Brown sugar
1 Tsp Cinnamon
1 Egg
2 Tsp Baking soda
1/3 Cup Molasses
1/2 Tsp Salt
1 Tsp Ground Cloves
Sugar for rolling

How to make it: 

Pre-heat the oven to 350. Combine flour, spices, baking soda, & salt. With an electric mixer at medium-low speed, beat butter & sugar, until light & fluffy. Beat in egg & molasses. Reduce speed to low, & gradually add flour mixture until just mixed. Chill until firm, about 1 hour. Shape dough into approximately 1' balls, roll in sugar, & place about 2 ' apart on a baking sheet. Bake until the edges begin to brown, about 15 min. Cool on baking sheet 2 minutes, and then move to wire racks.
Cool completely.
