Kids can be notoriously anti-veggie. Here are few fun ways to get vegetables into their lunch box and into their tummies.

*Make a wrap. Add shredded carrots, lettuce, tomatoes, sprouts or even broccoli slaw to some tuna, hardboiled egg or deli meat. Wrap it with a tortilla or put into a pita for a healthy, vegetable filled lunch.

*Raw veggies and dip. Cut up some carrots, cauliflower, tomatoes, cucumber, peppers or raw broccoli and pack them with a little container of low-fat ranch. Kids will love dipping their veggies and with the ranch garnish, they might even love eating them. Try a different vegetable every day for variety.

*In the winter, send soup on a thermos. You can put all kinds of vegetables in soups. My mom made the best Vegetable Beef soup and while gobbling it up, I was gobbling my vegetables too.

*If all else fails, try V8. It is delicious and refreshing but best of all, it does count as a serving of vegetables. You could also make your own version in a blender.

*If your kids are truly against vegetables and won't even try V8, try a recipe where you can sneak them in. You can find delicious ones in The Sneaky Chef or Deceptively Delicious books. It won’t exactly be teaching your children to love their veggies but you can feel better knowing they are getting what their growing bodies need. At the same time, just keep serving them like always in other ways.
