I'm not a big meal planner. I'll get a bug up my butt to do it once every few months. We're not big on cooking. But the last two weeks we have. At least half the nights. That's a HUGE change for us. I hate cooking and we either have "make your own stuff" night or eat out.
Anyhoo - this week, we have a menu planned for 5 nights. I even went to the grocery store and bought according to that plan. Eric is going to cook 2 meals and I'm going to cook 3. We'll see how long that lasts. LOL Here are the meals we're planning for the week. I'm not sure which day will be what, we'll figure that out the day before.
Chicken Roll-Ups: Grilled chicken, ranch dressing, crumbled bacon, lettuce and cheese all rolled up into a large tortilla - Served with chips
Sloppy Joe - Served with corn and fries
Baked Ziti with ground beef, garlic bread & salad
Corned Beef Sandwiches - toasted with melted swiss, served with chips and possibly French Onion Soup
Baked Parmesan Chicken served with corn/pea mixture and rolls
I'm also planning on making lunches each night for the next day. Hopefully I'll actually stick to it. ;)

oh you know I am such a menu planner, it is pathetic. On the menu for this week is and in no particular order....
beef tostadas, spanish rice, corn/peas
smoked turkey sausage w/potatoes & onions, green beans
tilapia, rice, veggie
homemade chicken pizzas w/all the fixings
honey curry chicken, potatoes or rice, veggie
lasagna, caesar salad, 5 cheese bread
I didn't have time to hit up supertarget this past weekend, so I am going with what we have in the fridge/cupboards...but I definitely have to plan or I would be a lost soul when it comes to dinnertime.
I also sort of have to plan lunch too for DH & the girls.....or at least make sure stuff is there for them to eat. LOL

:giggle Beka, I love you reason for editing!
Baked ziti is just a tube pasta like penne mixed with spaghetti or marinara sauce, pour it into a baking dish, cover with mozzarella cheese and bake.:) You can also mix into riccota cheese or meats or veggies in with the pasta.
Let me see if I can find a recipe.... Here (http://www.recipezaar.com/35282) you go. :)

I buy my week's groceries on Saturday, but I get my box of veggies from the farm on Wednesdays, so I've been winging it. However, I got the list of what will be in my box on Monday, so I suppose I could make some sort of plan. Tonight's plan is soup, to use up the carcass from the roast chicken and also all of last week's veggies - I still have a lot of leeks and cilantro and yellow carrots, so I think I can make a nice tomato/chicken soup.
I'll look over the list of what is to come and let you know what I'm making.
OK, I am looking at the list, and it sounds gooood.
So, for now, my tentative meal plans are as follows:
Wednesday: Pasta with broccoli and parsley cooked lightly in olive oil with garlic and a little salt, and a spinach salad
Thursday: Marinated vegetable salad with hardboiled eggs
Friday: Pasta sauce with mushrooms and some kind of pasta - spinach salad
Saturday: Turkey soup with lots of veggies
hmmm- i may have to make some of this ziti now i know what it is LOl thanks for that!
